Sugar Free Orange Marmalade

A TRIED AND TESTED SEASONAL INDULGENCE



When you’re eating local produce that’s seasonally available, it helps you to live in harmony with your environment. This in turn prevents digestive issues that might arise from eating foods you might ‘feel like’, but are not what your body needs to keep you at optimal health for the environmental conditions you’re currently in. And the more fresh, organic and local produce you can include in your diet the better!


As you may have noticed, oranges are now very much in season and I’ve been extremely fortunate to have very generously recieved some locally grown organic oranges and lemons with wich to create this latest seasonal indulgence.

It’s a simple and easy to make recipe without all the added sugar and preservatives you’d usually find in store bought marmalade.

I hope it inspires you to make your own, get creative in the kitchen and experiment with other seasonal flavours!


INGREDIENTS

  • 4 large oranges

  • 1 lemon

  • 4 cups water

  • 1/4 - 1/2 cup stevia


INSTRUCTIONS

Prepare the Fruit:

  • Wash the oranges and lemon

  • Cut the oranges finely and remove any pips.

  • I like to use the whole orange for a more chunky style marmalade. If you prefer a more classic style, cut the oranges half squeeze out the juice, scoop out, and discard the flesh, and finely chop the skins.

Cook the Fruit:

  • In a large pot, combine the oranges, lemon juice, and water.

  • Bring to the boil, then reduce the heat and simmer for about 30-40 minutes, until the mixture has reduced by about half and the peels have softened.

Sweeten and Thicken:

  • Add the stevia, tasting as you go to achieve your desired sweetness.

(Stevia is much sweeter than sugar, so add it gradually).

Simmer Until Ready:

  • Continue to simmer the mixture, stirring frequently, until it reaches the desired consistency. This can take another 10-20 minutes.

  • To test the consistency, place a small spoonful on a chilled plate and let it sit for a minute. If it gels and wrinkles when you push it with your finger, it’s ready!

Jar the Marmalade:

  • While the marmalade is still hot, ladle it into sterilised jars, leaving about 1/4 inch of headspace and seal with sterilised lids.

Cool and Store:

  • Allow the jars to cool completely at room temperature and store in a cool, dark place.

  • Refrigerate after opening.


Use this super simple sugar free indulgence as a side to salty snacks this winter as you recharge and relax... Enjoy!
